
When I was in high school we were given the option to do a history project on ANY topic that interested us. At the time I was discovering baking and was fascinated by the gazillions of versions of chocolate chip cookies. Yes, I did a history project on the history of the Chocolate Chip Cookie. Do I remember much from it? Of course not. But learning that there is a historical component to the evolution of everything was pretty cool. Good job teacher.
My slight obsession with chocolate chip cookies has me keenly aware of what I like most in a homemade cookie. One day a Facebook post caught my eye – Kelly shared a picture of her mom baking cookies with her kids. And those cookies in the picture looked amazing – I could see in the picture they were spread out thin with a crispy edge and chewy inside. THIS is my favorite kind of chocolate chip cookie. Naturally, I asked Kelly if she could share her mom’s recipe, so here it is. Thank you Kelly!
kelly’s mom’s chocolate chip cookies
- 2 1/4 cup flour
- 1 tsp salt
- 1 tsp baking soda
- 2.5 sticks butter – softened
- 3/4 cup white sugar
- 2/4 cup brown sugar – packed
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups semi sweet or sweet chocolate morsels
Mix butter, eggs, and vanilla first. Then add dry ingredients, gradually. Bake at 375, 8-9 minutes.
Tip: Use parchment paper and keep an eye on these while they bake.
